El Salvador - San Carlos Dos
San Carlos Dos is a coffee with notes of dark chocolate and blackcurrant and whose anaerobic fermentation gives notes similar to those of mulled wine.
To obtain this coffee, the cherries are first cleaned and sorted. They are pulped and placed in barrels of water where the temperature is maintained between 22 and 28°c for 115 hours. The coffee is then washed, cleaned and dried for 7 to 10 days.
It can be enjoyed with an automatic machine equipped with a grinder, as an espresso, a plunger or using gentle methods.
