What is coffee roasting?

Coffee roasting is a crucial step in the coffee making process. But what really happens behind the scenes of roasting?

Coffee roasting is the process of heating green coffee beans to make them consumable and develop their flavors. During roasting, the beans undergo chemical changes that transform their color, texture, and taste.

How is coffee roasting done?

Green coffee beans are heated to temperatures ranging from 180°C to 210°C. During this process, the moisture in the beans evaporates and the Maillard reaction transforms acids and proteins to develop the coffee's aromas. In order to obtain the coffee profile we want, we act on parameters such as the starting temperature of the roast, the duration of the roast, the development time and the end temperature.

What are the different roasting levels?

There are several levels of coffee roasting, ranging from light roast to dark roast. Each level of roasting allows for unique flavors and aromas. A light roast will highlight the acidic and fruity notes of the coffee, while a dark roast will reveal more chocolatey and caramelized flavors. We adapt our roasts according to each of our coffees, their terroir, the drying process, the preparation method and what we want you to discover in the cup.
